Mussel Salad

½ lb cooked mussel meat

1 avocado, cubed

1 shallot, sliced

½ cup small red beans

1/3 cup chopped dill

Juice of 1 lemon

2 tbsp olive oil

Salt and black pepper to taste

• Gently mix all ingredients in a bowl.

Serves two as lunch, four as first course.
