Pan-fried Tilapia

2 tilapia fillets (about 8 oz. each)

Salt to taste

½ cup flour (preferably Wondra brand)

½ cup corn oil to cover the bottom of pan

Hot pepper sauce or fresh lemon juice

• Dredge fillets in salted flour. Shake off extra flour. Heat oil in a large pan.

• Sautee each side on medium-hot heat until golden brown -- about 8 minutes total.

• Drizzle with hot sauce or lemon juice, if desired

Serves two with a side dish of greens.

A mug of cold Samuel Adam’s lighter-bodied Pale Ale would hit the spot.
