Caprese Salad - My Way


1 pint assorted cheery tomatoes

3 cocktail cucumbers, sliced

½ cup pitted kalamata olives

1 cup small mozzarella balls

2 tbs regular or coarse basil pesto (Costco carries it)

salt and black pepper to taste

2 tbs olive oil


• Mix all vegetables, add salt, peppers, and olive oil. Taste for seasoning.


Serves two as a salad course.


A glass of zesty Pinot Grigio would go well.
